The carpet trick
Place a carpet on top of a fence post. You can jump onto it, and over the fence, but mobs still can't get out.
Leads
Use a lead on a fence post to tie an animal to it. Walls don't work for this, only fences.
GatesFence gates open by hand and with redstone. Mobs can't open them, and villagers can't either.
